Desiccated Liver
What is Desiccated Liver?
Desiccated liver is a dried liver extract usually derived from cows. There are numerous health benefits to eating liver, and this organ has been a dietary mainstay for many cultures and over many centuries. Now, however, few of us regularly eat liver, and those who have tried incorporating it into their diets have often found that liver tastes metallic, bitter, bad, or downright disgusting. That's why desiccated liver tablets are a great option -- you can get all the benefits of liver, in convenient little capsules. You'll never even taste it!
Benefits of Eating Liver
Organ meat is a nutrient-dense animal superfood eaten for centuries and now central to Paleo, Primal, Weston A. Price, and Sally Fallon, and traditional diets. Organ meat contains many times more nutrients than muscle meat. Liver is an excellent source of:
- Protein: A macronutrient needed for every cell in the body, protein helps build and maintain muscle, repair tissues, and produce enzymes and hormones. Protein also plays a key role in weight management by curbing appetite and promoting a healthy weight.
- Essential Amino Acids: These "building blocks" are required for building, repairing, and healing body tissues, muscles, bones, skin, and hair. You need amino acids for metabolism, weight maintenance, fat loss, and muscle growth.
- Iron: Iron is essential for cells throughout the body and, in particular, red blood cells, as without iron hemoglobin can't be formed. Hemoglobin is required for the transport of oxygen from the lungs to the rest of the body. Desiccated liver is a great way to prevent and treat iron deficiency and anemia, since the naturally-occurring iron in desiccated liver is highly unlikely to cause the side effects and overdose dangers of synthetic iron supplements.
- Vitamin A: Vitamin A is critical for vision, the immune system, and organ health. Vitamin A from a food source (such as desiccated liver) is associated with lowering cancer risk, slowing vision loss in AMD (age-related macular degeneration), and minimizing the severity of measles. Like iron overdose, vitamin A overdose is much more likely with synthetic vitamin A than with naturally-occurring vitamin A.
- B Vitamins including Folic Acid and Choline: B vitamins support the nervous system, digestive system, circulatory system, energy, and brain function. Read more about the role of B vitamins here.
- Copper and Other Minerals: Copper and other minerals are vital for bones, teeth, blood, nerves, and immune system health.
- CoQ10: Some of the benefits of CoQ10 include boosting energy, lowering high blood pressure and high cholesterol, supporting heart health, and strengthening the immune system.
- Vitamin K2: Many years ago, Dr. Weston A. Price identified a food component he called "Activator X." The WAPF now believes that this Activator X compound is vitamin K2. Vitamin K2 prevents and treats numerous diseases including heart disease, cancers, osteoporosis, and tooth decay.
It is important to note that animals raised in factory farms/CAFOs (confined animal feeding operations) are unlikely to have healthy organs. These animals are fed cheap, processed diets and given antibiotics and growth hormones -- not to mention, they are kept in miserable, abhorrent conditions. When choosing organ meats or liver extract supplements, always find out where the animals were raised and under what conditions. Livers from grass-fed, pastured cows are the healthy, nutrient-dense, toxin-free organ meats to look for.
Does the Liver Store Toxins?
This is a myth. The liver is your body's filter -- but it does not operate like the filters in your car! Toxins do not accumulate in the liver; instead, they are neutralized or filtered out of the body. Toxins that accumulate in the body are stored in fat, not in the liver. Instead, the liver stores vitamins, minerals, and other nutrients to aid in toxin elimination.

Fighting Fatigue with Desiccated Liver
More than 65 years ago, Benjamin K. Ershoff, PhD, conducted research showing the fatigue-fighting benefits of desiccated liver. In his experiment, lab rats were split into three groups:
- Group 1 was fed an average diet with 11 added vitamins.
- Group 2 was fed the same diet as Group 1, with the addition of vitamin B complex.
- Group 3 also ate the same diet as Group 1, but 10% of their diet was given as desiccated liver.
The rats continued on their assigned diets for a few weeks, at the end of which they where put in a container of cold water that they could not climb out of. The results of this experiment were as follows:
- Rats in Group 1 swam an average of 13.3 minutes before tiring and sinking.
- Rats in Group 2 had similar results, swimming an average of 13.4 minutes before giving up.
- Most of the rats in Group 3, the desiccated liver group, swam for so long that the test period expired before they gave up! Three of the rats swam for 63, 83, and 87 minutes, while the other nine were still swimming strongly at the end of the 2 hour test period.
These astounding results suggest that something in desiccated liver may prevent the body from becoming fatigued. This bodes well for athletes, body builders, and endurance runners, as well as those suffering from chronic fatigue.

Desiccated Liver Side Effects
To avoid side effects, choose a desiccated liver tablet made from healthy, pastured cows. Meat and organs from factory farmed cows are unhealthy and loaded with chemicals and toxins. You'll also want to look out for fillers, binders, and additives -- the tablets or capsules should contain only desiccated liver.
Side effects occasionally include mild digestive issues such as gas. This side effect usually disappears as your body gets used to taking desiccated liver.
